Scrambled Eggs with Tomato, Serrano Chile and Onion, Served with Organic Black Beans, Fried Plantain (banana) and seared fresh cheese.

Rancheros

Fried Eggs on a Fried Tortilla bathed in Salsa Ranchera with Refried Beans, seared fresh Cheese and Guacamole

Motuleños

Fried Tortilla with Organic black Beans, Fried Eggs, Tomato Sauce Yucatecan Style, Ham, Peas and Fried Plantain.

Chile Relleno

Poblano Chile Stuffed with Scrambled Eggs and Chaya, Spanish Chorizo (chistorra) and Gratin Cheese Served with Tomatillo Sauce.

Machacados

Scrambled Eggs with Shredded Salted beef Served with Chiltomate Sauce with Avocado, Flour Tortilla and Corn.

Chilaquiles

Totopos topped with Salsa Ranchera, Sour Cream, Avocado, Onion, Queso Fresco. with choice of Fried or Scrambled Eggs and with Chicken or Beef.
